If you're seeking a truly unusual annual statement plant, try cardoon! Prized as a vegetable in the Mediterranean, this thistle-like artichoke relative adds an architectural touch to flower boarders, and unique flavor to the dinner table. The stems are harvested for eating in autumn, and benefit from blanching to improve their flavor, which is the process of excluding sunlight.

In late summer or early fall, wrap them with newspaper or cardboard, tied in place. Stake if necessary to keep them upright. Lift them from the ground 3-4 weeks later. To prepare, boil the leaf midribs and thinly sliced hearts for thirty minutes in lightly salted water with a squeeze of lemon juice. The dried flower heads may also be used as a vegetable rennet in certain specialty cheese recipes from Spain and Portugal.
